Mini Strawberry Shortcakes

Once Valentine’s Day has passed, I get spring fever, and the items that come out of my kitchen definitely reflect that.  I’m currently dreaming of tea parties in the garden, and these little mini strawberry shortcakes would be perfectly elegant for serving guests at such an affair.  Lightly sweetened mini loaf cakes are layered with fresh sliced strawberries and cream cheese icing for an elegant bite that any girl, no matter her age, will love.  Even better is how quick and easy these beauties are to make!  You can always replace the strawberries with whatever fruit is looking best at the moment.  Any type of fresh berry would be especially delicious.

Mini Strawberry Shortcakes
Makes 12 shortcakes

For the Shortcakes:

2 large eggs
1/2 cup granulated sugar
6 tablespoons butter, softened
2 tablespoons milk
1 teaspoon almond extract
1 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt

For the Cream Cheese Icing:

4 ounces cream cheese, softened
1 cup confectioners’ sugar
2 tablespoons milk
Fresh strawberries, sliced

 

Make the Shortcakes:

1. Preheat the oven to 350 degreees Fahrenheit.  Grease 12 mini loaf molds.

2. Beat together the eggs and granulated sugar in a large mixing bowl until the mixture turns a pale yellow.  Add the butter, milk, almond extract, flour, baking powder, and salt, and mix until just combined.

3. Spoon the batter into the prepared molds, filling them 2/3 of the way full.  Bake for 11 to 13 minutes, or until a wooden pick inserted in the center comes out clean.  Let cool in the molds for 10 minutes, and then remove the cakes and let them cool completely on a wire rack.


 

Make the Cream Cheese Icing:

1. Combine the cream cheese and confectioners’ sugar in a medium bowl and beat at medium-low speed with an electric mixer until smooth.  Beat in the milk.

Assemble the Strawberry Shortcakes:

Slice each shortcake in half. Spread cream cheese icing on each bottom half, and top the icing with a layer of sliced strawberries.  Replace the top half, and spread it with a layer of icing, and garnish with additional strawberry slices as desired.
